Goat Cheese Crostini with Warm Honey and Pear

Ingredients

  • 8 oz fresh goat cheese, at room temperature
  • ¼ cup plain Greek Yogurt
  • 1-2 tbsp fresh thyme
  • ¼ cup high-quality creamed honey
  • 1 baguette, cut into slices and toasted into crostini (see above)
  • A handful of pistachios
  • ½ pear julienned

Instructions

  • Heat your oven to 400 degrees F.
  • Slice your baguette and place the slices on a rimmed cookies sheet. Drizzle with oil and baked for 8-10 minutes or until the bread is slightly toasted.
  • While the crostinis bake, add the goat cheese, Greek yogurt, and fresh thyme into a food processor and mix.
  • Remove the crostini from the oven and let cool.
  • While the crostini slices cool, grab a small saucepan and heat-safe bowl. Fill the pot with an inch or so of water, and be sure the bottom of the bowl doesn't touch the water. Add the creamed honey to the heat-safe bowl and stir over low heat.
  • Once the crostinis are cool, spread a generous amount of the goat cheese mixture onto each crostini, then top with pistachios, pear slices, and warm honey.
